Why I Love This Vegetable Lentil Soup

Soup is one of my love languages. It’s warm, comforting, and nourishing. This Vegetable Lentil Soup makes no exceptions and is one of my favorite meals to whip up in a short time.

There are many reasons I love this soup. First, I love this recipe because it is easy to throw together any time. I can make it for a quick lunch or dinner when I don’t feel like cooking. I can make it on busy days when I don’t have time to get groceries because I almost always have these ingredients.

Second, I love this recipe because it is packed with nutritious ingredients. It is loaded with vegetables and lentils, which give this soup an outstanding balance of protein and fiber. It’s hearty, healthy, and satisfying.

Ingredients & Substitutions

  • Olive oil – can use coconut or avocado
  • Onion
  • Celery
  • Carrots
  • Green bell pepper
  • Garlic
  • Diced Tomatoes
  • Peas – I used frozen, but canned or fresh work as well
  • Lentils – I used green
  • Oregano – I used dried; double the amount if using fresh
  • Broth – vegetable or chicken
  • Spinach
  • Salt and pepper

Equipment Needed To Make Vegetable Lentil Soup

  • Large pot
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Ladle

How To Make Vegetable Lentil Soup

In a larger pot over medium heat, saute the onion, green pepper, celery, and carrots in olive oil until the vegetables are softened.

Add in the garlic and saute for 30 seconds.

Add the diced tomatoes, frozen peas, lentils, oregano, broth, and a big pinch of salt. Bring to a boil for about 20-30 minutes until the lentils are thoroughly cooked.

Once the lentils are cooked, turn off the heat and add the spinach. Mix the spinach in until it is wilted.

Serve immediately and enjoy!

No, lentils do not need to be soaked like dried beans. However, you should wash your lentils before using them, just like you would rice.

What to serve with Vegetable Lentil Soup?

This soup is excellent as is, but if you want something to accompany it, I recommend fresh-baked sourdough bread or a quick side salad!

Vegetable Lentil Soup

Servings 6 servings

Ingredients

  • 1 T Olive oil
  • 1 Onion diced
  • 1 Green pepper diced
  • 1/2 cup Celery diced
  • 1/2 cup Carrots diced
  • 3 Garlic cloves minced
  • 14.5 oz Diced tomatoes
  • 1 cup Peas frozen
  • 1 cup Green lentils
  • 32 oz Broth vegetable or chicken
  • 1 t Oregano dried
  • 5 oz Spinach
  • Salt and pepper to taste

Instructions

  • In a large pot over medium heat, saute your onion, pepper, celery, and carrots in olive oil until the vegetables are softened.
  • Add in your minced garlic and saute for 30 seconds.
  • Add your diced tomatoes, peas, lentils, oregano, and broth. Add a big pinch of salt and bring to a boil.
  • Boil until your lentils are cooked through. About 20-30 minutes.
