There are so many reasons to love this Easy Greek Salad. One of those reasons is how simple, light, and refreshing it is. It’s perfect for any hot summer day or even when you need a quick throw-together lunch on the go. It takes minutes and is packed with crunchy produce and a flavorful dressing.

Another reason I love this Easy Greek Salad is because it’s a healthy salad to make any time of the year. The fresh produce topped with the oil and vinegar-based dressing makes for a healthy, light, satisfying dish. To make this salad more robust, pair it with grilled chicken or quinoa or add some garbanzo beans for additional protein.

Ingredients and Substitutions

  • Cucumbers
  • Grape tomatoes
  • Red onion
  • Red bell pepper
  • Feta cheese
  • Kalamata olives
  • Extra virgin olive oil
  • Red wine vinegar, you could use freshly squeezed lemon juice
  • Dijon Mustard, you could leave out
  • Oregano, dried
  • Salt and pepper

Equipment Needed

  • Knife
  • Cutting board
  • Bowl
  • Mason jar with lid or bowl and whisk (for the dressing)
  • Measuring cup and spoon

How To Make This Easy Greek Salad

The preparation for the salad is quick and easy.

First, chop your cucumber, tomatoes, onion, and bell pepper and add them all to a large bowl.

Next, prepare your dressing. Add your oil, vinegar, mustard, oregano, salt, and pepper to a pint-size mason jar. Secure the lid tightly and shake until everything comes together. If you don’t have a mason jar, use a bowl and whisk until your oil and vinegar emulsify.

Add a portion of the cucumber mixture to a bowl and top with olives, feta cheese, and your dressing to make your salad. Enjoy!

In a traditional Greek salad dressing, the ingredients are EVOO, red wine vinegar, oregano, and salt. However, I like the addition of Dijon mustard because it makes the dressing a little more robust.

Ingredients

  • 1 English cucumber sliced
  • 1 Red bell pepper diced
  • 1 pint Grape tomatoes quartered
  • 1/2 Red onion sliced
  • 1/4 cup Extra virgin olive oil
  • 1/4 cup Red wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp Oregano dried
  • salt pinch
  • pepper pinch
  • Feta cheese topping
  • Kalamta olives halved, topping

Instructions

  • First, chop your cucumber, tomatoes, onion, and bell pepper and add them all to a large bowl.
