Easy Greek Salad
My Easy Greek Salad is one of our go-to recipes, especially in the summer when the produce is abundant and delicious. This recipe checks all my boxes: it's easy, simple, and flavorful.
- 1 English cucumber sliced
- 1 Red bell pepper diced
- 1 pint Grape tomatoes quartered
- 1/2 Red onion sliced
- 1/4 cup Extra virgin olive oil
- 1/4 cup Red wine vinegar
- 1 Tbsp Dijon mustard
- 1 tsp Oregano dried
- salt pinch
- pepper pinch
- Feta cheese topping
- Kalamta olives halved, topping
First, chop your cucumber, tomatoes, onion, and bell pepper and add them all to a large bowl.
Next, prepare your dressing. Add your oil, vinegar, mustard, oregano, salt, and pepper to a pint-size mason jar. Secure the lid tightly and shake until everything comes together. If you don't have a mason jar, use a bowl and whisk until your oil and vinegar emulsify.
Add a portion of the cucumber mixture to a bowl and top with olives, feta cheese, and your dressing to make your salad. Enjoy!
