These simple breakfast tacos don’t need a recipe card, but I thought they would be good for inspiration in the kitchen. They come together quickly, can be customized to your liking, and will surely please whoever you feed. I love to make these for myself after a workout, for my husband and I for a quick brunch, or even as a fun breakfast taco bar when I need to feed a crowd.

One of the nice things about these breakfast tacos is that you can easily customize them to your liking, which is another excellent reason to make them when serving many people at once for breakfast or brunch! I like mine with bacon, but you can use sausage, ham, or exclude the meat. Soft scramble the eggs and melt cheese on top or leave the cheese on the side and let your guests decide. Top with your favorite toppings and there you have it! Simple breakfast tacos will be a new easy go-to for any time of day and occasion!

Ingredients For Simple Breakfast Tacos:

Complete instructions on how to make these simple breakfast tacos are step-by-step in the recipe box below. Here are a few quick notes on the ingredients needed to make this recipe.

Tortillas: Below, I will link my favorite brand of tortillas. I like to use a lighter tortilla for these breakfast tacos so they aren’t too heavy. Cassava flour is a grain-free flour, making these gluten-free! Of course, you could use any tortilla you have on hand or like!

Eggs: I use chicken eggs, whisk them well, and scramble them over low heat. If you prefer duck eggs, you can easily use those.

Meat: I almost always have bacon thawed out in our fridge so that is my usual meat of choice. I pan fry it until crispy!

Sauce: The adobo aioli, which I’ve included in the recipe card below, is a must for these tacos. The sauce takes them to the next level, adding a bit of heat.

Extra toppings: The best part of making breakfast tacos is customizing them to ingredients you have on hand. Toppings could be so many different things: sour cream, jalapeños, lime, pico de gallo, cheese, pickled onions, or even sauerkraut.

Simple Breakfast Tacos – Optional Variations:

Different types of protein: Bacon, sausage, chicken sausage, turkey sausage, chorizo, ham, steak, ground beef, anything goes! This is where leftovers could really come into play!

Sauce options: I am stuck on my adobo aioli, but you could also use salsa, sour cream, crema, or a simple squeeze of fresh lime or lemon juice.

Cheese: I don’t add cheese to mine, I’m not a big cheese fan, but you could use cheddar, pepper jack, Colby, cotija, or maybe even goat cheese. Again, whatever you have on hand will probably work here!

Ingredients

Simple Breakfast Tacos:

  • 2 Eggs scrambled
  • 2 Bacon slice cooked
  • 1 Tbsp Adobo aioli
  • 1 Tbsp Microgreens
  • 2 Tortillas

Adobo Aioli:

  • 1 Tbsp Mayonnaise
  • 2 tsp Adobo sauce
  • 1/2 Lime freshly squeezed
  • Pinch of salt

Instructions

Instructions:

  • Make the adobo aioli by mixing together all of the sauce ingredients. Set aside.
  • char the tortillas on both sides over an open flame.
  • Assemble the tacos- layer the bacon, eggs, sauce, and microgreens on top of each tortilla.
