Butter: In baked goods, I always use unsalted, softened butter. I would omit the salt in the dry ingredients if you use salted butter.
Sugar: I use a combination of light brown sugar and cane sugar for this recipe.
Egg & Egg yolk: When separating the egg yolk from the egg white, crack the egg into your hand and let the white drop into a bowl through your fingers, separating the two. This works easier when the egg is cold.

Um… I am making this tomorrow!! One question, what is the purpose of 1 egg and 1 egg yolk? Maybe I am a rookie, but I’ve never come across a recipe with an extra yolk and I’m intrigued!!
Great question! The added egg yolk makes for a creamier batter leading to a chewier more tender cookie. With this size of cookie I think it’s an important add, but making a normal size cookie you can totally do without!
