I love a good taco night because tacos are easy to make, clean up, and always delicious. We used to stick to basic ground beef with taco seasoning taco night, which is also fantastic, but let me tell you, these Ground Chicken and Chorizo Tacos are beyond excellent. They are our new go-to tacos for taco night. They are just as easy to make, but the flavors are incredible.

Why I Love These Ground Chicken and Chorizo Tacos

Where do I even begin? These tacos have taken over all of our east taco night dinners. They come together in minutes, clean-up is a breeze, and the flavors are incredible. The idea for these tacos came from a local restaurant where Will always orders the chicken fajitas with chorizo. The fajitas always come out the same delicious and quick, and the chorizo gives them a pop of flavor that can not be beaten! So, when thinking of a way I could recreate them at home, I quickly came up with the idea of combining ground chicken with the bulk chorizo and creating essentially taco meat. I added some diced onion and bell pepper to get more of that fajita style but kept everything similarly sized so that my ground chicken and chorizo tacos were born. We love this recipe, and I know you will, too!

Ingredients and Substitutions

  • Ground chicken
  • Chorizo
  • Onion
  • Green bell pepper
  • Taco seasoning – store-bought or homemade
  • Water – or broth
  • Tortillas – soft or hard
  • Taco toppings: cheese, sour cream, avocado, pico, lettuce, jalapenos, hot sauce

Equipment Needed To Make Chicken and Chorizo Tacos

  • Cutting board
  • Knife
  • Saute pan – large
  • Wooden spoon
  • Potato masher – optional

How To Make Chicken and Chorizo Tacos

Over medium heat, cook the ground chicken and chorizo in a large skillet. Be sure to break up the meat as it cooks with a wooden spoon or a potato masher.

Add the onion and green bell pepper when the meat is almost cooked. Cook until the onion becomes soft.

Add your taco seasoning and 1/4 cup of water. Mix together and let the water cook off.

Season with salt to taste, and build your tacos however you like! I make mine on a soft tortilla shell (charred over an open flame) topped with sour cream and jalapenos.

Absolutely! The taco seasoning enhances the delicious flavors of the chorizo.

Is chorizo healthy?

I wouldn’t say it’s “healthy,” but I don’t think it’s terrible either. That’s another reason I love this recipe: the chorizo is paired with low-fat, high-protein meat like ground chicken, making it a well-balanced taco meat.

Ingredients

  • 1 lb Ground chicken
  • 1 lb Chorizo
  • 1 Onion diced
  • 1 Green bell pepper diced
  • 3 Tbsp Taco seasoning
  • 1/4 cup Water
  • To make the tacos: tortillas cheese, sour cream, lettuce, pico, avocado, jalapeños.

Instructions
