- Oregano – I used dried; double the amount if using fresh
- Broth – vegetable or chicken

How To Make Vegetable Lentil Soup
In a larger pot over medium heat, saute the onion, green pepper, celery, and carrots in olive oil until the vegetables are softened.
Add in the garlic and saute for 30 seconds.
Add the diced tomatoes, frozen peas, lentils, oregano, broth, and a big pinch of salt. Bring to a boil for about 20-30 minutes until the lentils are thoroughly cooked.
Once the lentils are cooked, turn off the heat and add the spinach. Mix the spinach in until it is wilted.
Serve immediately and enjoy!

- 1 T Olive oil
- 1 Onion diced
- 1 Green pepper diced
- 1/2 cup Celery diced
- 1/2 cup Carrots diced
- 3 Garlic cloves minced
- 14.5 oz Diced tomatoes
- 1 cup Peas frozen
- 1 cup Green lentils
- 32 oz Broth vegetable or chicken
- 1 t Oregano dried
- 5 oz Spinach
- Salt and pepper to taste
Instructions
