Looking for the perfect fall salad? Well here it is! This incredibly delicious Fall salad with honey-dijon dressing combines some of my favorite fall flavors. Crunchy apples and celery to maple roasted pumpkin seeds, and all topped off with a beautiful honey-dijon dressing. It’s quickly become a favorite here…healthy, effortless, and beyond delicious.
This Fall has so far been warm and sunny. Although I am not complaining I knew I needed a dish that was on the cooler and lighter side and this salad is just that. Cool, crisp, but still features those delicious fall flavors.
I am here to welcome the Fall season with open arms. I love the coziness Fall brings every year. The sweaters, the soups, the pumpkin everything, and of course the best part…apples!
When to serve the Fall salad with honey-Dijon dressing
This salad is perfect to have for lunch, which is how I usually have it. It would also make a great salad for a dinner party or just as a side dish to any meal you make. Also, this Fall salad would be the PERFECT side to add to your Thanksgiving menu this year!
Ways to customize and prep ahead
This salad is extremely customizable. You could easily swap out most of the salad ingredients and make it to your liking. Don’t like feta? Use goat cheese or parmesan. Don’t like celery? Use carrots. You could swap the pumpkins seeds for pecans or walnuts. Also, you can use kale or arugula over spring mix. Use what you have and I’m convinced this dressing can make anything delicious.
In addition to all of the ways you can customize this salad, you can also make most of the salad ahead of time. You can cook and crumble the bacon and store in the refrigerator. You can roast the nuts and store in an air tight container on the counter. Finally, you can easily make the dressing and store it in the refrigerator until you are ready to use it. Make this even more inviting to add to the Thanksgiving menu this year!
Fall Salad with Honey-Dijon Dressing Recipe
Ingredients:
- Spring Mix
- 2 Celery stalks, sliced
- 4 bacon strips, cooked and crumbled
- 1 apple, sliced
- 1/2 c pumpkin seeds
- 1 Tbsp maple syrup
- 1/2 t cinnamon
- 1/4 c honey
- 1/4 Extra virgin olive oil
- 1 T apple cider vinegar
- 1 T Dijon mustard
- pinch of salt
Directions:
- Preheat your oven to 350 degrees. Line a small baking sheet with parchment paper.
- Mix together your pumpkin seeds, maple syrup, and cinnamon. Spread evenly on the parchment lined baking sheet and bake for 12-15 minutes.
- To make the dressing: Combing your honey, EVOO, apple cider vinegar, Dijon mustard, and pinch of sale. Whisk everything together.
- Now it’s time to build your salad. Add your greens to a large bowl and top with the sliced celery, apples, bacon crumbles, pumpkin seeds, and your delicious honey-Dijon dressing. Enjoy!
