Fall Salad with Honey-Dijon Dressing

Ingredients

  • 2 C Spring Mix
  • 2 Celery stalks sliced
  • 4 bacon strips cooked and crumbled
  • 1 apple sliced
  • 1/2 C pumpkin seeds
  • 1 Tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 C honey
  • 1/4 C Extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • pinch of salt

Instructions

  • Preheat your oven to 350 degrees. Line a small baking sheet with parchment paper.
  • Mix together your pumpkin seeds, maple syrup, and cinnamon. Spread evenly on the parchment lined baking sheet and bake for 12-15 minutes.
  • To make the dressing: Combing your honey, EVOO, apple cider vinegar, Dijon mustard, and pinch of sale. Whisk everything together.
  • Now it’s time to build your salad. Add your greens to a large bowl and top with the sliced celery, apples, bacon crumbles, pumpkin seeds, and your delicious honey-Dijon dressing. Enjoy!
