On these gloomy Fall days, I usually want nothing more than a warm bowl of soup. Any kind of soup, but chili truly never disappoints. And with a big bowl of chili, you need a big slice of warm, fresh out of the oven, homemade cornbread. With this effortless but nevertheless delicious recipe I can promise you will be more than satisfied.
When I tell you it takes combining wet and dry ingredients, I’m not lying. It’s really that simple.
Say goodbye to buying the box mix because you won’t need it after making my cornbread recipe. In fact, you won’t ever want it again because homemade is far better than anything that can come out of a box. Have you ever read the ingredient label on the back of a boxed cornbread mix? You will find ingredients like BHT, SODIUM ACID PYROPHOSPHATE, and MONOCALCIUM PHOSPHATE… ingredients absolutely unnecessary to make cornbread.
After baking in the oven for about 22-28 minutes, you will have the most light, fluffy, and moist cornbread I have ever had. I love topping my slice with soft butter, flaky sea salt, and local honey…my mouth is watering just thinking about it.

- I prefer to make this in my cast iron skillet, but if you don’t have one a muffin tin or 8″ cake pan will work just as well.
- I usually keep mine simple and plain, but you can throw any add-ins you like to this recipe. Some I have used in the past are jalapenos, diced green chilis, and cheddar cheese.
- Make sure you are using a neutral oil…I typically use avocado oil but coconut oil would work just as well.

Cast Iron Skillet Cornbread Recipe

Comforting homemade cornbread that is light, fluffy, moist, and absolutely delicious.
Cast Iron Skillet Cornbread Ingredients
- 1-1/2 c All purpose flour
- 1/2 c Corn meal
- 1/2 c cane sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1-1/4 c whole milk
- 2 eggs
- 1/4 c butter, melted
- 1/3 c avocado oil, or melted coconut oil
Cast Iron Skillet Corn Directions
- Preheat your oven to 350 degrees and butter your cast iron skillet.
- First, in a medium-sized bowl combine your dry ingredients. Flour, cornmeal, sugar, baking powder, and salt. Set aside.
- Next, In a small bowl whisk together your wet ingredients. Whole milk, eggs, butter, and oil.
- Pour your wet ingredients into the bowl with your dry ingredients and mix until just combined.
- Now add your batter into your prepared cast iron skillet and bake for 22-28 minutes. You will know your cornbread is done by inserting a toothpick into the center and having it come out clean.
- Enjoy your cornbread as is or spruce it up a bit with softened butter, flaky sea salt, and a drizzle of honey.

Notes
- If you don't have a cast iron you can make this into muffins, or use a cake pan!
- This is just a plain, simple cornbread but if you want to use any add-ins I would recommend diced jalapeños or diced green chiles. Cheddar cheese or even pepper jack!
