Cast Iron Skillet Cornbread

Ingredients

  • 1-1/2 c All purpose flour
  • 1/2 c cornmeal
  • 1/2 c cane sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1-1/4 c whole milk
  • 2 eggs
  • 1/4 c butter melted
  • 1/3 c avocado oil or melted coconut oil

Instructions

  • Preheat your oven to 350 degrees and butter your cast iron skillet.
  • First, in a medium-sized bowl combine your dry ingredients. Flour, cornmeal, sugar, baking powder, and salt. Set aside.
  • Next, In a small bowl whisk together your wet ingredients. Whole milk, eggs, butter, and oil.
  • Pour your wet ingredients into the bowl with your dry ingredients and mix until just combined.
  • Now add your batter into your prepared cast iron skillet and bake for 22-28 minutes. You will know your cornbread is done by inserting a toothpick into the center and having it come out clean.
  • Enjoy your cornbread as is or spruce it up a bit with softened butter, flaky sea salt, and a drizzle of honey.

Notes

  1. If you don't have a cast iron you can make this into muffins, or use a cake pan!
  2. This is just a plain, simple cornbread but if you want to use any add-ins I would recommend diced jalapeƱos or diced green chiles. Cheddar cheese or even pepper jack!
