Glazed Maple-Balsamic Salmon

Ingredients

  • 1/2 cup Maple syrup
  • 1/2 cup Avocado oil
  • 1/4 cup Balsamic vinegar
  • 1 tsp Cinnamon
  • 2 Salmon filets
  • Mixed Greens
  • 1 Apple sliced thinly
  • Slivered almonds handful
  • Dried cranberries handful
  • Feta optional

Instructions

  • Make the dressing/marinade using maple syrup, balsamic vinegar, avocado oil, and cinnamon in a mason jar. Secure the lid and shake vigorously to combine the ingredients thoroughly.
  • Using half of the marinade, pour it over the salmon filets in a shallow dish. Let it marinate for at least 20 minutes. Store the remaining dressing in the fridge.
  • Preheat your oven to 400 degrees. Place your salmon skin side down on a prepared baking sheet, and bake for 15-20 minutes or until it reaches an internal temperature of 145 degrees.
  • While the salmon is baking, prepare the salad. To a large bowl, add the mixed greens, sliced apple, slivered almonds, dried cranberries, and feta(if using). Toss with the remaining dressing.
  • Serve the salad alongside the baked salmon filet.
