Equipment

  • 1 strainer

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 white onion chopped
  • 1 green bell pepper diced
  • 1 jalapeno diced
  • 3 garlic cloves minced
  • 1/4 cup parsley fresh and chopped
  • 3 Tbsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper optional
  • 28 oz diced tomatoes
  • 16 oz tomato sauce
  • 16 oz kidney beans drained and rinsed
  • 16 oz pinto beans drained and rinsed
  • 16 oz beef bone broth
  • salt and pepper to taste

Instructions

Slow Cooker Instructions

  • 1. Either on the stovetop or on the brown setting(if available) in your crockpot, brown the ground beef with a pinch of salt.
  • 2. Now add in your onion, green pepper, jalapeno, garlic, parsley, and a pinch of salt, and sauté until the onion begins to soften.
  • 3. Add all of your spices(chili powder, onion powder, garlic powder, cumin, oregano, and cayenne) and toast your spices for 30 seconds.
  • 4. If cooked on the stovetop, add everything to your crockpot and set it on low for 8 hours. If cooked in your crockpot, change the setting to cook on low for 8 hours.
  • 5. Add in your diced tomatoes, tomato sauce, kidney beans, pinto beans, broth, salt, and pepper.
  • 6. Cover and cook on low for 8 hours.
  • 7. Serve with shredded cheese, sour cream, tortilla chips, jalapeños, avocado, or whatever your heart desires. Enjoy!

Stove-Top Instructions

  • 1. Over medium heat, in a large pot, cook your ground beef.
  • 2. After your beef is cooked through, add in your onions, green pepper, jalapeno, garlic, and parsley…sauté until the onion becomes soft.
  • 3. Next, you want to toast your spices by adding in your chili powder, onion powder, garlic powder, cumin, oregano, and cayenne(optional) and sautéing until fragrant…about 30-60 seconds.
  • 4. After your spices are fragrant you will add in the remaining ingredients. Diced tomatoes, tomato sauce, kidney beans, pinto beans, broth, salt, and pepper. Bring everything to a boil. Reduce heat and simmer for 15-30 minutes.
  • 5. Serve with any toppings you desire like cheese, sour cream, tortilla chips, jalapeños, or avocado. Enjoy!
